Baking doesn’t always have to include a long list of ingredients and steps. Often it can be pretty taunting especially when trying to make something gluten free and that actually tastes like something other then cardboard. This Easy Gluten Free Blender Banana Muffins recipe is so good that know one will ever know that its gluten free, and the best part is that it is so easy you can make it with your eyes closed!
You Will Need:
1/2 cup softened butter (1 stick)
2 eggs
1/2 cup sugar (I used half white sugar, half coconut sugar to make them healthier. I also always cut the sugar from the original recipe; you can add more if you want them to be sweeter.)
1 ½ cups of Outrageous Baking GF Flour Mix (you can use any GF flour you like but I’m in love with this one.)
3 very ripe bananas
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon vanilla
¼ cup chocolate chips (optional)
Directions:
Step 1: Preheat oven to 350
Step 2: Combine the sugar, butter, vanilla, and eggs in blender.
Step 3: When the mixture is fully combined add the bananas and blend until smooth.
Step 4: Now add the rest of the ingredients, leaving out only the chocolate chips. If the mixture is too thick to keep blending put it on pulse.
Step 5: Fold in the chocolate chips using a spatula.
Step 6: Line each cupcake tin with a liner and fill 3/4 way to the top.
Step 7: Bake for 20-30 minutes or until a toothpick comes out clean.
